My Rice Noodle Story

Recently, after several hours of prep, a week of curing, draining, turning over and finally trimming into useable pieces, my wife said, “why do you go to all that trouble when you can just buy it at Costco?” Simple, I said, I enjoy making it myself. One, it’s usually much cheaper, two, I get satisfaction by being able to say, “I made this” and finally, because mine’s better. See for yourself! She tried it and replied, “damn that’s good. How much did you make?” A lot, I said. I always make a lot!

Now that I think about it, not sure I’ve ever seen fresh rice noodles, just the dried ones. Not even at Costco! So there!

This is a very basic recipe, four ingredients and one is free (practically speaking). It’s just rice and water.
